Delicious Pumpkin Cookies All Will Love

A great dessert to share with family during the holidays.

This thanksgiving I was told to make any sort of dessert I want for my family. As many do, I went straight to pinterest for some great ideas. I came across some pumpkin desserts that looked amazing. I then narrowed my search to just pumpkin desserts. 

I found a recipe for pumpkin cookies that I had to give a go. They looked fulfilling and had frosting on the top. I had a lot of trouble trying to find canned pumpkin at the store. I finally found some at Sunfresh, and was able to start baking.

The recipe was fairly easy but did take up a lot of my time. It made way more cookies than I was expecting, but in the end was a good thing because they were a hit. They came out of the oven looking very full and fluffy.

The frosting was just three ingredients and was easy to spread on. After finishing the total of almost 50 cookies I was surprised at how many people enjoyed them. My mom and brother extremely dislike pumpkin and they fell in love with these cookies. 

I highly recommend giving these cookies ago and trying them for yourself. They would be a great addition to christmas, and a conversation starter. I recommend cutting the batch in half, unless you have a very large family.

Ingredients:

2 cups butter

2 cups granulated sugar

2 teaspoons baking powder

2 teaspoons baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

2 eggs

1 15 ounce can pumpkin

4 cups flour

Cream Cheese Frosting

½ cup butter

1 8 ounce package cream cheese

1 pound powdered sugar

1 teaspoon vanilla

Ground cinnamon sprinkled on top

Instructions:

  1. Preheat the oven to 350 degrees. In a large bowl, beat 2 cups butter with electric mixer on medium speed till light and fluffy. Add granulated sugar, baking soda, salt, cinnamon, and nutmeg. Beat until combined. Add eggs and 2 teaspoons vanilla, beat until combined. Beat in pumpkin. Add the flour in slowly until combined. Dough should be very wet.
  2. Drop dough by the tablespoon onto parchment lined sheets. Bake in preheated oven for 10-12 minutes, until tops are set. Transfer cookies to a rack until cool.
  3. For the frosting, beat all ingredients until soft and whipped. Frost cooled cookies then sprinkle with cinnamon.
